Beef in Red Wine – Recipe

Preparation

  1. Cut the beef sirloin into cubes and quickly brown them in a little olive oil in an ovenproof dish until they get color.
  2. Set the meat aside. In the same fat, gently sauté the finely chopped onion and carrots until they soften.
  3. Add chopped garlic and red bell pepper, then return the meat to the pot and stir in the flour.
  4. Pour in the red wine, add thyme and chopped tomatoes, and cook for a few minutes.
  5. Stir in the olives, season with salt and pepper, cover and simmer over low heat for another half an hour, stirring occasionally.
  6. Finally, add chopped parsley and more seasonings as desired.
  7. Serve with mashed potatoes or polenta.

1200 g beef sirloin
400 g peeled fleshy tomatoes
1 dl pitted olives
2 carrots
1 onion
1 large red bell pepper
2 cloves garlic
1 dl olive oil
1 tablespoon flour
1 bunch parsley
salt, pepper
1 teaspoon dried thyme
