Beef in Red Wine – Recipe

Preparation
- Cut the beef sirloin into cubes and quickly brown them in a little olive oil in an ovenproof dish until they get color.
- Set the meat aside. In the same fat, gently sauté the finely chopped onion and carrots until they soften.
- Add chopped garlic and red bell pepper, then return the meat to the pot and stir in the flour.
- Pour in the red wine, add thyme and chopped tomatoes, and cook for a few minutes.
- Stir in the olives, season with salt and pepper, cover and simmer over low heat for another half an hour, stirring occasionally.
- Finally, add chopped parsley and more seasonings as desired.
- Serve with mashed potatoes or polenta.
